Yes, at the start of every implementation we define what additional data (on top of our standard) has to be made available in Tableau.
How much consultancy is needed to implement Tableau?
This depends on the scope/requirements. Before the implementation starts, we organize a brainstorming session to define the exact scope. After this, we create an estimate of the required consultancy days.
Do I need to free up many resources to implement Tableau?
